Holyrood Distillery, opened in 2019, was the first new single-malt distillery in Edinburgh in nearly a hundred years. It sits in the old goods shed of St Leonards railway station, near Holyrood Park, and makes both whisky and gin. You can visit for guided tours and tastings — ticketed, and worth booking ahead — and there’s a bar on site if you just fancy a dram. A short walk from the foot of the Royal Mile.
