Long Clawson straggles for the best part of a mile through the Vale of Belvoir, built around the dairy that made its name. Twelve local farmers founded the co-operative here in 1911, and it remains one of only a handful of dairies licensed to make Stilton under the cheese’s protected name. The dairy shop sells it at the source.
