Caol Ila is the biggest distillery on Islay, though you’d hardly guess it from the road down. Its stillhouse windows frame the Paps of Jura straight across the narrow Sound of Islay, one of the great views in Scottish whisky. Much of what it makes goes into blends, but the single malt is a fine smoky dram. There’s a visitor centre with tours near Port Askaig.
