Lincolnshire Poacher is made at Ulceby Grange, a family farm near Alford on the edge of the Wolds, where Tim and Simon Jones turn unpasteurised milk from their own Holstein-Friesian herd into a hard, cheddar-style cheese. Cheesemaking began here in 1992, and the cheese now sells through delis and cheesemongers across the country. It’s a working dairy farm rather than a visitor attraction, so seek it out in a good cheese shop rather than call in.
