Dornoch Distillery is a tiny craft operation set up in the old fire station behind Dornoch Castle Hotel, making small batches of whisky and gin. Tastings are by arrangement rather than drop-in, so it’s worth contacting them ahead. It’s right in the centre of Dornoch, a couple of minutes from the cathedral.
