Medieval and Georgian streets ring a broad market square at Hitchin, where St Mary’s, the largest parish church in Hertfordshire, rises over the stalls. Out on the chalk to the north, Hitchin Lavender lets you walk and cut the rows through high summer. It’s an easy town to spend a market morning in, with plenty of independent shops.
