The Henry Robertson Dining Room is the fine-dining heart of Pale Hall, a grand Victorian house in fifty acres of the Dee Valley on the edge of Eryri. Chef Luke Selby, trained at Le Manoir and Restaurant Gordon Ramsay, cooks seasonal Welsh produce with classical technique and touches of Japanese and Filipino cooking, in tasting and omakase form. The National Park begins less than a mile south, and it is a short run west to Bala and its lake for a day in the hills.
