A seventeenth-century former coaching inn in mid-Cornwall, the Falmouth Arms is now the home of Kevin Viner, the county’s first Michelin-starred chef, who turns out polished cooking beside the wood-burner in the old bar, with proper roasts on Sundays and rooms above. Walk it into the wooded creeks of the Upper Fal Estuary to the south-west, or carry on to Truro and its cathedral.
