Gower Salt Marsh Lamb comes from sheep grazed on the Llanrhidian marshes, where the salt-tolerant grasses of the estuary give the meat its particular flavour. It was registered as a Protected Designation of Origin in 2021 — the same status carried by champagne or Parma ham. Sold direct and to restaurants rather than from a shopfront; the farm at Weobley Castle is one place to buy it.
