Edradour, tucked in the hills above Pitlochry, has been going since 1825 and is one of the smallest traditional distilleries in Scotland: a cluster of little whitewashed buildings run by a tiny team. It’s a lovely place to see whisky made at cottage scale, with guided tours and tastings. Check times and book before you head up.
