Highland Park, on the southern edge of Kirkwall, is the most northerly Scotch whisky distillery in the world, and has been distilling on the site since 1798. It’s one of the few distilleries still malting some of its own barley by hand over peat, which gives the whisky its smoky-heathery note. Tours and tastings run from the visitor centre — worth booking ahead, especially over the summer. Just up the hill from Scapa.
